DESCRIPTION
SANTA FE SEASONING MIX blends a wonderful combination of New Mexico style premium Herbs and Spices offering the operator a versatile seasoning combination when used as a primary ingredient for Chipotle flavored Mayonnaise or a delicious Compound Butter when blended with Butter (or Margarine) and a high quality Barbecue Sauce. As a Santa Fe Mayonnaise, our Seasoning offers the distinct, smoky flavor of Chipotle Chili, Herbs and a hint of Garlic, producing a wonderful Sandwich Spread or Dipping Sauce for your favorite Appetizers or Main Courses. As a Compound Butter, SANTA FE SEASONING MIX provides an authentic flavor profile when Broiling or Grilling various Meat, Poultry and Fish Selections. Great tasting and versatile, our SANTA FE SEASONING MIX is a natural enhancement to anyone's menu selections.

Because SANTA FE SEASONING MIX is blended under rigid standards, using only the highest quality, freshest ingredients possible, the product remains absolutely consistent, a must in today's food service environment.

INSTRUCTIONS

FOR SANTA FE CHIPOTLE MAYONNAISE
Using a rigid wire whisk or electric mixer fitted with the whip attachment, thoroughly blend ENTIRE contents of SANTA FE SEASONING MIX package with 3 GALLONS Mayonnaise. Chill 4 hours prior to serving. Yields 3 GALLONS.

FOR SANTA FE BARBECUE BUTTER
Using a rigid wire whisk or electric mixer fitted with the paddle attachment, thoroughly blend ENTIRE contents of SANTA FE SEASONING MIX package with 5 POUNDS softened Butter or Margarine and 1 1/4 CUPS of your favorite Barbecue Sauce. Chill 4 hours prior to using. Yields approximately 6 POUNDS finished Butter.

RETURNS

APPLICATIONS
Listed below are suggestions for preparing various foods using SANTA FE SEASONING MIX:

FOR SANTA FE CHIPOTLE MAYONNAISE

  • Prepare Chicken Breast as described above, then serve on a Grilled 'Bolillo' Roll spread with CHIPOTLE MAYONNAISE topped with Grilled Onions and Anaheim Chiles, Lettuce and Tomato.

  • Serve CHIPOTLE MAYONNAISE as a dipping Sauce for Taquitos, Flautas, Mini Chimichangas or Chili Rubbed, Barbecue Basted Chicken Skewers.

  • Spread CHIPOTLE MAYONNAISE over a Grilled Flour Tortilla, then cover with shredded Santa Fe Barbecued Chicken (below), Lettuce, Diced Red Onion, Shredded cheese and Fresh tomato Salsa (Pico de Gallo). Roll the Tortilla into a 'Santa Fe Roll', slice and serve with additional CHIPOTLE MAYONNAISE and Fresh Salsa.

FOR SANTA FE BARBECUE BUTTER

CHICKEN

  • Skewer Chicken Tenders, lightly brush with Salad Oil and season liberally with our CHILI RUB SEASONING. Char-Broil and baste with SANTA FE BARBECUE BUTTER. Serve with CHIPOTLE MAYONNAISE for dipping.

  • Char-Broil Boneless Chicken Breasts, basting with SANTA FE BARBECUE BUTTER, then serve as a center-of-the-plate feature, or sliced and served 'Fajita' style.

FISH

  • Baste your favorite Fish liberally with SANTA FE BARBECUE BUTTER while cooking on the char-broiler. Works exceptionally well with fresh Yellowtail, Catfish and Salmon.

SHRIMP

  • Prepare Shrimp and Vegetable Skewers by char-broiling and basting with SANTA FE BARBECUE BUTTER.

STEAK

  • Char-Broil 'Carne Asada', basting with SANTA FE BARBECUE BUTTER for a flavorful twist to a traditional favorite.

VEGETABLES

  • Fresh Sliced Vegetables (Zucchini, Bell Peppers, Onion, etc.) char-broiled and basted with SANTA FE BARBECUE BUTTER offers a more upscale approach to plate accompaniments or Light Luncheon Entrees.
